Ev's Almost Black Eye

On Monday night Everett tried to give himself a black eye. Cael, Ev, and I were upstairs talking to Grammy while she was getting into her jammies. Cael and I were playing on the bed and Everett was crawling/walking around. He decided to grab onto a cord hanging off Grammy's counter to help himself stand up. Bad choice. It was a cold iron. It got him right next to his right eye. Poor thing. All the other bumps and scrapes on his face are from bumping and falling. I hate this stage because they always seem to have a bruise or scrape as proof that they are walking.

Mmmmm......Food

So Everett LOVES food. He loves almost everything. In fact I don't think that he hasn't liked everything that has been given to him. He likes real food so much better than baby food. He'll still eat the fruit, but shuns the veggies. I still try to feed them to him, but he's had better and he won't make it easy for me.

This is Ev eating a banana all by himself on Sunday. He likes to be independent while eating too. Why do they grow up so fast?


























Here is Everett eating spaghetti last night. Yum. He kept getting distracted by Cael, but that's not new.

Who Knew Vacuuming Could Be So Fun

I decided to make Cael help with the cleaning up if he is the one making the mess. So we pulled out the vacuum and he helped. He didn't like pushing it, so we cleaned up using the hose and he thought it was hilarious. He would pick up the little food bits and put it in the hose. He is one silly boy.

10 Months Old

Everett is 10 months old. I can't believe it. He is my crazy boy. Here is ten facts/things that we love about Everett.
1. He has beautiful blue eyes.
2. He is so smart.
3. He can clap his hands.
4. He waves.
5. He has five teeth. I think six will be here shortly.
6. He loves to eat. Everything.
7. He loves to play with Cael. Even though Cael doesn't want him too.
8. He loves the bath.
9. He still isn't sleeping through the night.
10. He loves to be held and cuddled.

It's Official

Everett is walking. He has been trying a lot harder for the last two days, but today he just started doing it. He is still slow and a little unsteady. But he's got it.

Halloween Costume Revisited

I was talking to Jill the other day about how I have kept all of Cael's old Halloween costumes. Just in case someone would want to use them. Jill and I got on this topic because Kaytee and Adam were making fun of Cael's Peter Pan Halloween picture. They were saying that he looked like a little person. I kept telling them it was because Cael's costume was a 4T, but he was only 16 months old. So last night I busted out the Peter Pan costume and it fit Cael like a glove. He had so much fun running around in it. He didn't want to take it off even when I was putting his jammies on him.


This is not the picture that they were saying it about, but I needed a reference for everyone to see how small he was when he wore it originally.

Yummy Whoopie Pies

I had a major sweet tooth yesterday, so I decided to make something new for dessert. Cael loves to look through all of Bonnie's cookbooks. He always stops at the page with Whoopie Pies on it. Bonnie had planned on making it, but we hadn't made it yet. So we had everything I needed. They turned out so good. The filling was really sweet, but the pie wasn't so it was perfect. They were a lot bigger than I thought they would be. I assumed they were cookies, but they were right in calling them pies. The picture is the pie on a salad plate.































So, I'll included the recipe for those of you who want to try it for yourselves. I really liked it. But I could only eat half because it was so big. I think next time I'll make them using a tablespoon for my measurement for the cookie.


Whoopie Pies
serves 6

Cakes
2 c. flour
1/2 c. cocoa powder
1 tsp. baking soda
1/2 tsp. salt
8 tbsp. (1 stick) unsalted butter, softened
1 c. packed light brown sugar
1 large egg, room temp
1 tsp. vanilla extract
1 c. buttermilk

Filling
12 tbsp. (1 1/2 sticks) unsalted butter, softened
1 1/4 c. confectioners' sugar
1 1/2 tsp. vanilla extract
1/8 tsp. salt
2 1/2 c. Marshmallow Fluff


1. For the Cakes: Adjust two oven racks to the upper-middle and lower-middle positions and heat the oven to 350 degrees. Line two baking sheets with parchment paper. Whisk the flour, cocoa, baking soda, and salt in a medium bowl.
2. With an electric mixer at medium speed, beat the butter and brown sugar until fluffy, about 2 minutes. Beat in the egg until incorporated, then beat in the vanilla. Reduce the speed to low and add the flour mixture and the buttermilk atlernately in two batches.
3. Using a 1/3 cup measure, scoop six mounds of batter onto each baking sheet, spacing the mounds about 3 inches apart. Bake until the cakes spring back when pressed, 15-18 minutes, switching and rotating the baking sheets halfway through baking. Cool the cakes completely on the baking sheets, at least 1 hour.
4. For the Filling: With an electric mixer at medium speed, beat the butter and confectioners' sugar together until fluffy, about 2 minutes. Beat in the vanilla and salt. Beat in the Fluff until incorporated. Refrigerate the filling until slightly firm, about 30 minutes. (The filling can be refrigerated for up to 2 days.)
5. Dollop *1/3 cup of the filling on the center of the flat side of six of the cakes. Top with the flat side of the remaining six cakes and gently press until the fillingspreads to the edge of the cake. Serve. (Whoopie Pies can be refrigerated in an airtight container for up to 3 days.)

*I didn't use that much filling for each cake. I just frosted a cake like I would for a cookie/cupcake.

Cute Cael

What do you do when people in the house want to watch different things at the same time. This was our dilemma on Sunday. Cael wasn't wanting to watch the Charger game with us, so we put a movie on for him on the computer. We connected head phones for him so the game and the movie weren't interfering with each other. He was so stinking cute. He loved wearing the head phones to watch his movie.

My Kaytee















I am so excited my Kaytee came down here for a quick visit. She moved to Connecticut last January and I have missed her like crazy. She is in California for a month for the holidays. I love love love Kaytee. No matter how much time has passes between visits, everything is just normal. No awkwardness. No silent moments searching for something to say. And even when there is silence it is okay. I can't wait for Kaytee and John to finish school, so they can hurry back to the west coast. I miss them so much.

Happy New Year

Adam and I went over to Denise's for New Year Eve. Adam and Denise work together. It was so much fun, but it really made me wish that all my family lived closer. All of her siblings came over with all of their kids. It was so fun. Denise is one of four with two sisters and one brother, just like me.
